¼ C Bob’s Red Mill GF flour
¼ C coconut milk from a can
Butter or coconut oil spray
Add the eggs and GF flour in a bowl and whisk well. Make sure all the lumps are out and the mixture is smooth. Add the milk and 2 dashes of salt. Whisk until blended.
Heat a crepe pan on medium heat. Add a pat of butter or coconut spray to coat the bottom of the pan. Add half of the mixture to the pan and swirl to distribute to the sides. When the bottom of the crepe is light brown, flip the crepe over. The bottom side will turn brown quickly. Remove and serve with your favorite fillings and toppings.
Suggested Toppings and Filling:
• Goat cheese and chives
• Sautéed veggies and melted cheddar
• Berries and cream – topped with powdered xylitol or coconut sugar
